Looks like we’re in for some scorchio weather this week, so here are our tips on keeping hydrated for the week ahead:

💧 Keep water with you all day, whether it’s a glass on your desk or a reusable water bottle that never leaves your side - have a constant reminder to drink water - add slices of fruit for extra flavour!! 🍋

💧 Top tip: if you clean and sanitise our glass bottles after use, you have a perfect reusable bottle for your hydration needs!

💧 If you feel hungry, you could just be thirsty as our bodies mistake the two quite often; if you feel hungry, have a glass of water and see if you’re still hungry in 30 minutes!🍽

💧 Find water too boring? Try our Water Kefirs, did you know they are a GREAT source of hydration, filled with vitamins and active cultures, whilst still tasting amazing?✨

If you like Vietnamese food, you’ll love this vegan Pho recipe, using our Thai spice infused broth! Happy weekend all!

ingredients:

🌶 1 Purearth Thai Spice infusion Broth
🌶 1 large onion, peeled and cut into quarters
🌶 large thumb-sized piece ginger, peels
🌶 1 cinnamon stick
🌶 2 star anise
🌶 1 tsp coriander seeds
🌶 ½ tsp cloves
🌶 230g Tofu
🌶 1 tsp coconut sugar or agave
🌶 1 ½ tbsp Tamari
🌶 200g flat rice noodles
🌶 2 spring onions, shredded
🌶 1 small red (bird's-eye) chilli, finely sliced
🌶 handful each of Thai basil and coriander
🌶 1 lime, cut into wedges

Method:
1. Pour the broth into a large saucepan.
2. Put the onion and ginger in a frying pan over a high heat and char on all sides, around 3-5 mins (you can also do this under your grill).
3. Once charred, add to the broth. In the same pan, toast the spices for 2-3 mins and once they begin to smell fragrant, add them to the Broth.
4. Use the same frying pan to fry the tofu with a little coconut oil, I like to use marinated tofu for extra flavour.
5. Bring the Broth to simmer and cook for 25 mins before straining.
6. Add the coconut sugar and tamari to season. Cook the noodles according to package instructions and split between two bowls, topping each with the cooked tofu, then pour into the bowls. Top each with the spring onions, chilli slices and herbs. Serve with the lime wedges and squeeze the juice on top!
